Iced mint tea recipe

iced_tea.jpgHere’s a nice, quick iced mint tea recipe, slightly adapted from something I found over at the Cooking with Anne blog, and perfect for the warm summer days ahead. I’m afraid I’m not a green tea lover. In fact, the only tea I’ll drink has to be some kind of mint variety - peppermint and spearmint the obvious choices. Anyway, on to the recipe. Here’s what you’ll need:

6 bags of mint tea (on this occasion I used Bigelow Mint Medley)
2 tbs honey (use more or less to taste)
2 cups boiling water

  • Combine everything in a one gallon pitcher (please make sure the pitcher will withstand boiling water), and let steep for at least 5 minutes, stirring until the honey is fully dissolved.
  • Add cold water to the top and remove the tea bags.
  • Add ice or pour over ice in glasses.
  • Garnish the glass with a chilled slice of lemon and enjoy!

Thanks again to Anne for the original idea.

Mint Medley Herb Tea is an all-natural, caffeine free blend of cool garden spearmint and peppermint.
